Pumpkin souped!

Saturday, June 28, 2008

My family loves pumpkin soup in winter! Yesterday they had some for lunch (I had made a big batch on Thurs night) & this was the final result. It got EVERYWHERE. (I was feeling sick, so I left them to eat it by themselves - silly me!)

Here is my pumpkin soup recipe. It is the yummiest ever (no I'm not biased LOL). It is adapted from my friend Nat's, but I have changed it.

Pumpkin Soup:

Ing: 3/4 pumpkin; 2 potatoes; 1/2 large sweet potato; 2 onions; 1 carrot; 4 rashers bacon; chicken stock powder; 250 mls cream; salt & pepper;

Method: * Cut up all vegetables & bacon & put into large saucepan. Add water & boil with 1 tsp chicken stock til soft.

* Blend up until nice consistency (if you want it thick drain away some of the liquid before blending -this is how I like it). Add cream. Add salt & pepper & chicken stock powder to taste. Enjoy!

To change the taste you can use sour cream in place of the cream or even natural yoghurt for a low fat variety!

Easy as that & definitely a family favourite here!

Even poor Gingy got covered!!

Poor little Gingy!!!! Was this after the hair gel session? Looks like they had a fun time while Mummy was sick - poor you!!! Had you washed out the hair gel yet??? Or did you just take them outside and hose them down (ok - I know you wouldn't do that sort of thing - certainly not in the middle of winter anyway!!! Looks like they enjoyed the soup. Aunty Sel made some delicious tomato soup here the other day (but nobody wore it!!)
Take care & hope you're feeling heaps better. God bless and lots and lots of love Mum xxxxxxxx
ps do you ever check your emails - if so, email me with the best one to write you on...... xxxxxxxxxxxxx

Well, I got my answer about whether the hair gel was washed out or not (it was hard to tell in the picture, but I see they were wearing the same clothes!!!)
Love mumxxxxxxxxxxxxxxxxxxxx
