Mum's no fail chocolate fudge sauce pudding!

I've been hoping to post more recipes on my blog & keep forgetting to have my camera handy whenever I'm cooking.  One reason I want them on here is that I want somewhere that my sisters & then children can find these recipes that I've found useful (since many are family favourites passed down from Mum or Granny). Another reason is that  I started my handwritten recipe book almost 20 years ago & the writing is getting faded in my old favourites.  While I can still make it out, I thought why not type it out!

Well this one is one of those old favourites that I fall back on again & again - one reason is that I always have the ingredients in the cupboard - the other is it's quick to put together & you can cook it while eating the main course!

Mum's Chocolate Fudge Sauce Pudding:

Ingredients:  1 cup self raising flour; 180g sugar; 2 tablespoons(tbs) cocoa; 1/2 cup milk; 2 tbs melted butter; 
SAUCE: 1 cup brown sugar; 2 tbs cocoa; 420mls very hot water (I just boil the kettle)

Method: 
*      Mix flour, cocoa & sugar.  Stir in milk & melted butter.
*     Into the bottom of a casserole dish place sauce ingredients & gently stir to mix well.

*     Onto sauce place cake mixture -  even out in dish.
*     Bake in a moderate oven for 45 mins.

Serve with Cream or Vanilla ice cream.
ENJOY!!!!

This batch I made for a group of  people helping with the church manse renovations (thus the lack of 'just served' picture).  I  doubled this mixture & it fed 10 easily (with the men having enormous second servings) - I would say at least 15 could have easily had it. It was a little rich as the cute little men (who constantly remind me are "not babies")  in charge of putting in the cocoa decided to heap the spoon each time - oh well it's great to have my "helpers"!! Still delicious though!

Mmmmm......sure looks good....We don't have it too much -actually, we don't have dessert too much these days....we probably don't need it. Hope you're surviving the cold down there....does that mean we'll have a freezing cold snap in a couple more days???? Oh, Well, spring is just about to spring upon us...Good news!!! When we were in the UK, the BBC breakfast announcer (Terry Wogan - of Eurovision commentary fame - the Eurovision loving aunties - would know of him) used to always sing along the little tune ..."Spring is bursting out all o-o-ver....spring had better buy a bigger dress".....on the first days of spring...how is that for a deep and meaningful comment (lol)....enjoy your last couple of winter days for 2010...Lots of love and warm hugs, Mum xxxxxxxxxxxxx
