Supereasy Homemade Lime Cordial!!!

A couple of weeks ago I was given a big bag of limes. I thought about what to do with so many (40 odd) - even though we love lime, that's a lot!!!! Anyway being inspired by my pastor's wife who said she was going to make lime cordial with hers, I searched through my many recipe books for a recipe - nothing! I did however find one which was for lemon cordial that sounded really easy, so I changed the quantities (when do I ever keep a recipe exactly the same?) & made my very first batch of homemade cordial - YUM!!! Once you have homemade cordial nothing is quite as nice. Thankfully it was so easy & yesterday I made the rest of the limes into more cordial (can you believe it had gone so quickly - considering we rarely have cordial in the house it's no wonder). I thought I would share with you my recipe:


SUPEREASY HOMEMADE LIME CORDIAL:
Ingredients:
20 or so limes
6 1/4 cups sugar
2.5 L water (0.66 gallons)


Method:

1. Wash the limes well (mine had dirt on being from a backyard tree, but if they're from a shop I'd want to give them an extra good scrubbing to get rid of pesticides). Peel the limes - I did this with a potato peeler.
2. Bring water, sugar & lime peel to the boil - boil for half an hour.

3. Juice the limes ( I like pulp in mine - if you don't you may want to sieve the juice)

4. Once peel mixture has cooled, sieve it & throw out the peels. Add the Lime juice to sieved cordial & refrigerate. Makes almost 3 litres. Don't forget it's a cordial so dilute it about 1 part cordial to 4 parts water to serve.

Dave & I particularly enjoy it with soda water (as pictured)- refreshing & delicious!!

**** PLEASE NOTE: This recipe is a little sour for some people's tastes.  To adjust to a sweeter cordial add more sugar or reduce the number of limes****

Wow - that looks deliciously refreshing. I often get big bags of limes and sometimes I don't get through them all - this is a great option. :)

Sounds really yummy! I may have to try this with the big bag of oranges we got from the farmer's market and which no one wants to eat (who wants oranges when easy peel mandarins are on the woolies shelves?)

Oh my...I've been dreaming of doing something with limes. I wish we had a lime (or lemon) tree!

Sounds so refreshing. I wish I had this recipe when all the lemons were in season here a few months ago. I had more than I knew what to do with. Maybe next year.

hmmm...i guess i'm the idiot who thought a cordial was a pastry?? so you educated me tonite! i'll have to admit - i took some extra limes tonite and made a key lime daiquiri from the August issue of Martha Stewart Living. it, too was DIVINE. (and much needed after a rough day ... *sigh*)
